Subject: Chinese history, cultural history, culinary history, historical geography.

Abstract: My research will focus on the history of Chinese cuisine and the modern formation and inheritance of regional culinary traditions. I will try to present the relationship between local food and the manufacturing of local identity in mainland China, and the different forces that influence said formation.
